Marlborough Pinot Noir
These grapes are from various
vineyards in the Marlborough region. There are a wide variety of clones
and rootstock, along with a mixture of soils and micro-climates. The
grapes were all machine harvested.
Cold soaked for four days the wine was then inoculated with a pure
yeast strain. Once dry it was pressed off skin to tank and a portion of
the blend went into oak barrels. All of the wine went through
malolactic fermentation.
FOOD
AND WINE PAIRING
Ideal with lamb or pork chops. Suited
to most rest meats and not bad as a wine to enjoy all on its own.

Marlborough Sauvignon Blanc
These grapes were selected from a
number of vineyards throughout the Marlborough region. The cool
conditions during flowering which resulted in lighter than average
yields were followed by ideal ripening and flavor development
conditions for the remainder of the growing season. Individual blocks
were targeted for their strengths and overall contribution to the
blend.
The grapes were harvested in the cool of the evening and overnight to
preserve flavors. Each block was kept separate throughout the various
stages of the winemaking process. Fermentations were carried out at
cool temperatures and when all tanks had completed ferment they were
proportionately blended, fined, stabilized and bottled
